Beat cream in a chilled glass/metal bowl with electric mixer. Gradually add confectioners' sugar & vanilla extract, continuing to beat until stiff peaks form
Spread 1 TSP of whipped cream onto each cookie
Press cookies together to make 3-inch stacks
Spread whipped cream in a 1-inch-wide line down the center of serving platter. Turn cookie stacks sideways & join into a log. Frost cookie log, fill gaps with remaining whipped cream & sprinkle with grated chocolate. Cover tightly & refrigerate, 8 hours to overnight. Slice diagonally to create striped pieces
