Partridgeberry Molasses Tarts

Ingredients

16 cups Partridge berries
2 TBSP lemon juice
1 TBSP lemon zest
1/2 cup brown sugar
2/3 cup diced apple (peeled)

Instructions

1. Combine all ingredients into a saucepan and cook until berries boiled down into a jam. The apple will help thicken the jam. Allow to cool before adding to the tart shell.

2 ..Prepare ingredients for tart: 1 cup of butter, 3/4 cup molasses 4 cups of flour, 2 1/4 tsp cinnamon, 2 1/4 tsp cloves 1 tsp ginger 1/4 tsp salt 2tsp baking soda 1/4 cup of hot brewed tea

Cream butter and molasses ( set aside) 2. sift together the flour, cinnamon, cloves, ginger and salt 3,Stir the baking soda into the hot brewed tea, Add immediately into the butter-molasses 4.add all ingredients together until a ball is formed. 5. wrap with cellophane and chill for 4/6 hours in refrigerator 6 .divide dough into two halves roll out dough on floured surface allowing for 1/8 inch thickness and 10 inches in diameter. 7. Transfer dough into an 8 inch greased tart dish or pie plate trim the edges. add the jam.. Using the scrapes of dough roll out to create strips to lattice the top of the tart. Preheat the oven to 325F bake for 35-40 minutes until the top is dark brown,
