Mom’s Carrot Casserole

Ingredients

8 med Carrots, grated on a large grater
3 tablespoons Butter
1 bunch Green onions, chopped
2 tablespoons Water
2 tablespoons Flour
2/3 cup Milk
1/4 teaspoon Salt
1/4 cup White wine

Instructions

1.
The day before dinner Melt butter in a large skillet and sauté onions for one minute.
2.
Add carrots stir to coat in butter and cook 2 - 3 minutes.
3.
Add water and steam for 5 minutes.
4.
Sprinkle the flour and add the milk, cook until thickened.
5.
Remove from heat and add salt to taste
6.
Add wine and mix thoroughly, place into a 7 cup (2qt) casserole dish. Refrigerate until ready to reheat
7.
Microwave 30 minutes on high, stir a couple of times
