Farmhouse Pumpkin Pie

Ingredients

4 cups cooked pumpkin
1 1/2 cups brown sugar
1 2/3 cups evaporated milk
1/2 cup cream
2 teaspoons ground cinnamon
1 teaspon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon salt
3 tablespoons chopped fresh thyme
1/2 cup toasted pecans for garnish
2 prepared bottom pie shell or make your own
4 beaten eggs
1/4 cup flour
1/2 cup toasted pecans for garnish
1/4 cup fresh thyme for garnish

Instructions

1. cut fresh pumpkin in half, take seeds out, place on parchment paper, cut side down. Bake at 350F until tender, about 1 hour. Or use 4 cups of canned pumpkin. I grow my own pumpkins and we love the taste of using fresh pumpkin for our pies.

2. If using fresh pumpkin, place pumpkin in a food processor to make it nice and smooth. If using canned pumpkin, place in a mixing bowl.

3. Mix flour, eggs, sugar, milk, cream, spices and finely chopped thyme with the pumpkin mixture

4. Pour the pumpkin mixture into 2 prepared pie shells.

5. Preheat oven to 350F, bake for 55 to 60 minutes. Pie should be jiggly, it will set while it cools.

6. Use pecans and thyme as a garnish. The thyme really adds a great taste to a traditional pumpkin pie.
